Ingredients

  • 1 lb alligator tail cut into ½” pieces

  • 1 Tbsp minced shallots

  • 1 Tbsp onion powder

  • 1 Tbsp olive oil

  • 1 pkg Cajun Style Breading/Batter Mix

  • 2 large eggs, beaten and mixed with 1 Tbsp water

  • 2 cups vegetable oil

Instructions

“These might be the best boar burgers ever! Ask your butcher to mince a nice piece of wild boar shoulder or belly for you – make sure it has a good marbling of fat for the best-tasting burgers. ”

- Jamie Oliver

1.) Add the olive oil, shallots and onion powder to a small bowl and mix together. Add the alligator tails and toss to coat, set aside.

2.) Heat the oil in a medium size saucepot and heat to 375°F.

3.) Add the Breading/Batter Mix to a shallow bowl. Add the eggs and water to a separate shallow bowl.

4.) In a small bowl, mix the brown, Worcestershire and tomato sauces together – adding as much or as little of each as you like. Peel, finely chop and stir in the shallots, then set aside.

5.) Add the alligator tails to the egg mixture and toss to coat. Dredge each piece in the Breading/Batter Mix and add to the oil.

6.) Fry for 1 - 2 minutes or until crisp. Remove the fried alligator to a plate lined with paper towels and serve immediately.
